Protein No-Bake Cookies

Watching Heated Rivalry made be feel like eating more protein. So, this is a recipe I've been making lately. It's basically no-bake cookies but with half the sugar replaced with protein powder.

Ingredients

  • 1 cup white sugar
  • 1/2 cup butter
  • 1/4 cup cocoa powder
  • dash of salt
  • 1/2 cup peanut butter
  • splash of vanilla extract (if you have it)
  • 1 + 1/4 cups of whey protein powder (I used vanilla flavoured NuAge Pure Whey Protein powder from Costco)
  • 3 cups of oatmeal

Directions

  • In a large mixing bowl, stir together the protein powder and oatmeal.
  • In a saucepan, bring the sugar, butter, cocoa powder and salt to boil for 1 minute while stirring often.
  • Take the saucepan off the heat and stir in the peanut butter (and vanilla extract if you're using it).
  • Pour the contents of the saucepan over the protein powder and oatmeal mixture. Stir until everything is well-combined.
  • On wax paper, parchment paper, or a silimat, you can plop down spoonfuls of the mixture to make cookies, or you can spread out a 3cm-ish layer of the mixture and split it into rectangles with a butterknife to make bars.
  • Allow the cookies/bars to rest for a few hours and then you can store them in containers or eat them all at once
